Badenjan-Mutabbal

Badenjan Mutabbal/ Baba Ghanoush by Chef Bobby Perillo

Pairs Perfectly with KRIS Pinot Noir

Ingredients

Eggplant 1 lb.

Tahini 1 oz.

Garlic Clove 1 ea.

Juiced Lemon 1ea.

Salt and Black pepper to taste

Extra Virgin Olive Oil as needed

Cayenne Pepper (optional) as needed

Directions

1. Wash and cook the whole eggplant on a grill until the skin has charred and the interior is fully cooked. When fully cooked the eggplant should be soft to the touch, especially on the stem end. The open flame of the grill will impart a light smoky flavor. If a grill is not available, the eggplant can be roasted in a 350 degrees F oven until soft.

2. Peel the eggplant and drain any excess juices.

3. Paste or finely mince the garlic clove.

4. In a food processor/blender pulse the eggplant flesh to a coarse consistency. Pulse in the tahini, garlic, lemon juice, salt, and pepper. Taste and adjust texture and flavor.

5. Serve the Baba Ghanoush in a bowl and drizzle extra virgin olive oil on top of the mixture. If your preference is a little spicy heat sprinkle some cayenne pepper on top. Accompany the dish with fresh pita bread or pita chips.
