Grilled Zucchini by Joanne Ahearn
Pairs Perfectly with KRIS Pinot Grigio
Ingredients
1 lb zucchini cut in 1 inch slices
3 tbs extra virgin olive oil
1 tbs fresh squeezed lime juice
1 tbs basil
1 tbs ginger.
Directions
Slice the zucchini, combine the rest of the ingredients in a small bowl. Add the slices and coat. Marinate for 15 minutes. Thread the slices on a skewer and grill over low heat for about 10 minutes or until your preference. Serve with salad or grilled meat. The zucchini will have a hint of Thai spicing, which is refreshing in hot weather.
